There’s something about fall that makes me want to cook cozy, nourishing meals. As the weather cools down, I find myself craving warm soups, hearty meats, and dinners that feel comforting without being overly complicated.
That’s why I love crockpot meals. They make it so much easier to get a nourishing dinner on the table without a lot of hands-on cooking. These healthy crockpot recipes are simple, family-friendly, and perfect for those busy fall evenings when you want something warm and satisfying waiting for you at dinnertime.

A Note About My Slow Cooker
Before we get into the meals, there's one thing I personally pay attention to when using a slow cooker: what the cooking vessel is made of.
Many traditional slow cookers have a coated or nonstick cooking surface, and I prefer to avoid those materials when I can, especially for meals that cook for several hours.
Instead, I like to use my InstantPot on the slow cooker setting. The stainless steel inner pot gives me the convenience of slow cooking while allowing me to avoid a coated cooking surface. It's become my go-to way to make these easy crockpot-style meals.
What Makes a Crockpot Meal Nourishing?
I don't think a healthy dinner needs to be complicated.
When I'm putting together a meal for my family, I like to focus on simple, nourishing ingredients that actually leave us feeling satisfied. That usually means a good source of protein, vegetables, nourishing fats, and plenty of flavor.
Some of my favorite ingredients to use in crockpot meals include:
Grass-fed beef
Pasture-raised chicken
Homemade bone broth or meat stock
Root vegetables like potatoes, carrots, and sweet potatoes
Onions, garlic, and fresh herbs
Nourishing fats like butter, ghee, or olive oil

1. My Mom’s White Chicken Chili
This is one of those recipes that has been in my family for years. My mom passed it down to me, and it has become one of my favorite meals to make once the weather starts getting cooler.
It’s cozy, creamy, and packed with tender chicken and white beans. I especially love that it makes a big batch, so we can enjoy it for dinner and have leftovers for an easy lunch the next day.

P.S. if it calls for sour cream, use greek yogurt instead for an extra protein boost!
2. Maple Dijon Chicken
This might be one of the easiest crockpot meals on this list. Seriously, there’s barely any prep involved.
All you need is chicken, ¼ cup maple syrup, 2 tablespoons Dijon mustard, and a little broth. Add everything to your slow cooker and let it do the work.
The combination of sweet maple syrup and tangy Dijon makes the chicken so flavorful without needing a long ingredient list. I love serving it with roasted potatoes, rice, or a simple vegetable for an easy family dinner.
3. Salsa Chicken
If you need a dinner that requires almost no thought, make salsa chicken. When my husband and I were newly weds, we made this almost every single week.
Add chicken breasts or thighs to your crockpot, pour over a jar of your favorite salsa, and let it cook until the chicken is tender enough to shred. You can also add a can of beans if you want to make it a little heartier and add a boost of fiber.
From there, you can serve it in tacos, over rice, in a bowl with your favorite toppings, or however your family likes it. It’s one of those meals I love having in my back pocket for a busy day.
4. Slow Cooker Pot Roast
I truly don’t know if anythings says “fall” like a pot roast.
A simple roast with potatoes, carrots, onion, and your favorite seasonings makes a hearty dinner with very little hands-on work. I especially love meals like this because you can add everything to the crockpot earlier in the day and come back to a dinner that’s essentially ready to go— sides and all.
It’s also a great option when you want something a little more substantial than soup.
5. Easy Taco Soup
Taco soup is another staple when I want something warm and comforting without spending much time in the kitchen.
You can keep the ingredient list as simple as you want with ground beef or shredded chicken, beans, tomatoes, broth, and your favorite taco seasoning. I love throwing a packet of Siete taco seasoning in when I want to make this extra easy and not worry about measuring out seasonings.
Top it with whatever your family loves, like avocado, shredded cheese, cilantro, or sour cream. And just like chili, taco soup is one of those meals that gets even better as leftovers.
6. Crockpot Lasagna Soup
If you love lasagna but don't want to spend the time assembling an actual lasagna, lasagna soup has become one of our favorite meals.
It has all the classic lasagna flavors in a much easier format: ground beef, tomatoes, broth, Italian seasoning, and noodles, with ricotta or another favorite cheese added at the end.
It’s hearty enough to be a full meal and feels like exactly the kind of dinner I want on a chilly fall evening. For an extra boost of fiber, I love to add chopped mushrooms and spinach.
7. BBQ Pulled Chicken
Pulled chicken is another one of my favorite crockpot meals because it’s incredibly simple and so versatile.
For this one, I like using boneless, skinless chicken thighs because they stay juicy and tender as they cook. Add the chicken to your slow cooker with your favorite BBQ sauce and let it cook until it easily shreds with a fork.
If you’re looking for BBQ sauce taht doesn’t have all the weird additives, I’d use either Primal Kitchen or Kinder’s BBQ sauce.
Serve the shredded chicken with roasted potatoes, sweet potatoes, coleslaw, or a simple vegetable. You can also pile it onto a baked potato or serve it as a BBQ chicken bowl for an easy dinner with leftovers.
8. Cornbread Taco Casserole
I love this one because it’s so easy, you don’t need a recipe, and it’s unbelievably forgiving.
I literally just take ground beef, add in taco seasoning, any veggies that I want, and then I mix up cornbread batter, pour that over the top, and let it cook for a few hours. It is SO delicious and hearty.
9. Beef & Sweet Potato Chili
This is one of those healthy crockpot meals that feels like fall in a bowl. I love the combination of hearty ground beef and sweet potatoes, and it’s such an easy meal to throw together in the morning and let cook throughout the day.
You can keep this one really simple with ground beef, sweet potatoes, tomatoes, broth, and your favorite chili seasonings. Add beans if your family likes them, or leave them out. It’s one of those easy crockpot recipes that is really hard to mess up and makes great leftovers, too.
10. Slow Cooker Beef Barbacoa
If you want something a little different from the usual fall soups and stews, this beef barbacoa is a great option. I love using a chuck roast and letting it cook low and slow with garlic, lime juice, cumin, chili powder, and a few other simple seasonings until the beef is tender enough to shred.
The best part is how versatile it is. You can use the shredded beef for tacos, rice bowls, or just serve it alongside some roasted potatoes and vegetables for an easy family crockpot dinner. It’s also a great meal to make when you want plenty of leftovers without having to cook again the next night.
How to Make Crockpot Meals Even Easier
One of the biggest reasons I love slow cooker meals is that they can take some of the pressure out of dinner. But there are a few little things that can make them even easier:
Prep Ahead When You Can
You don't necessarily need to prep everything the night before. Even washing and chopping a few vegetables when you have a little extra time can make getting dinner started much easier.
If you know you'll be making a particular meal later in the week, you can also gather the ingredients together ahead of time so you're not searching through the pantry when you're already short on time.
Make Enough for Leftovers
This is one of my favorite crockpot meal tricks.
If you're already making dinner, why not make enough for leftovers when the recipe allows? Having a ready-made lunch the next day can be such a gift during a busy week.
Some meals also freeze really well, so you can intentionally make a larger batch and save some for another night.
Keep a Few Family Favorites in Rotation
You don't need a different meal for every day of the month.
We started leaning more into meal rotations this year, and it has been a huge time saver! I'd much rather have a handful of meals that my family actually enjoys and that I know I can make without much thought.
Once you have a few favorites, you can rotate them throughout the fall and make small changes depending on what you have on hand.
